Dogs absolutely recognize their names, and anyone can see this. The only reason it's tougher to recognize with cats is that cats are assholes and choose to ignore people a lot of the time.

Cats use their claws to communicate things at times. Additionally, declawing a cat increases health risk to things such as arthritis which can make cats even more lethargic and generally less personable.

It's just unbelievable ghostly magic that cats can understand their names when the same person says it in the same tone of voice every time!

Incidentally, a study by Nalini Ambady showed that human feelings toward their physicians are based almost completely on the tone of what they say and almost not at all on the content, so even though cats recognize their name syllable by syllable, humans are not so discerning.
