Outside of sandwiches, stews are probably the only type of food that I can eat constantly and not get tired of.

Man, as soon as I get paid I'm going to make a big ol fuken pot of beef stew.

Or chilli if I'm feeling lazy.

Try to make stews with lamb meat or goat meat, rather than beef. Preferably using bones with meat. I like to simmer my meat for four hours on low heat.

A favorite one in Iran is khoresht gheymah, which is meat stew with split peas.

You brown the onions with oil, and once golden, add the meat. Let it fry a bit, then spice it. The basic spices in Iran is just salt & black pepper, and turmeric, but I like adding other spices sometimes, but not important. Add water and tomato paste. I sometimes add meat bouillons, but again, its not essential.

Bring it to a boil,reduce heat, and let it simmer for 3 hours. For the last hour, we have to add the split peas.

First let them soak in water for at least 10 minutes, then fry them for 5-10 minutes, just don't burn them. Add it to the rest of the stew, and let it cook for another hour.

Traditionally, it is served with french fires on top of the stew, but usually I personally ignore this part, or just add big chunks on potato with the peas.

I have added a lot of split peas here, but most Iranians add much less.

Recipe #1 Beef Stew

Basically that, but instead of cornstarch I just coated the meat in flour/salt/pepper to thicken the broth. Also, I chucked a can of stewed tomatoes in there.


Anyways, god damn this was good. I was a little worried because my gas oven is too manly and the lowest it can go is a low boil, but everything worked out. The only complaint I have with the recipe is that the broth is pretty strong, but that's nothing a little water can't solve.

Overall: ^-^

Next: Maybe some kind of pasta thing! Hopefully pesto.

The great thing about stew is that every country has their multiple versions of it and it usually has minor differences.
