Post     MADali's Kitchen

This thread is for the FTU Chefs.

I don't bakes cakes or sweets or anything like that, but I love cooking meals.

The best thing to make are stews, that is Indian/Far-East Asian curries or Iranian khoresht.

Obviously, all of this is good with rice, but i have a rice maker that makes rice making extremely easy, so I just have to concentrate on the curry/khoresht.

One of the easiest Iranian Khoresht is this (serves 1 person):

Ingredients:
Half an onion
1 garlic clove
0.200 grams of meat (or a bit more or less depending how much you eat), chopped into little 1-inch cubes
one potato chopped
spices: salt, black pepper, turmeric (dont use this if you dont have it, it'll still taste good) according to taste. Dont worry about the one teaspoon half teaspoon crap on recipe sites.
One Dried lemon with a hole in it. you probably dont have this easily available so you can probably just add lemon juice.
1 table spoon of Tomato paste

Instructions:
Fine chop half an onion and mince one garlic clove.
Use medium to high heat. Heat up a pot. Wait a bit until its hot then add a teaspoon of oil. Wait a bit, then drop in the onions and garlic. Start stirring them until the onions become very lightly brown.

Add the meat in and continue stirring. Add the spices in. Stir until you meat is brown. The whole process shouldn't take more than a couple of minutes.

Add around two cups of water and the tomato paste and the lemon if you have it. Oh yeah, you can probably add half a bullion cube or whatever its called to make the water tastier.

Let it come to a boil, the bring the heat down so the water is gently simmering. Cover it with a lid and leave it alone for 1.30 hours. After this time, chop up the potatoes and drop it in and wait another 30 minutes. Done!

Its annoying that so many cooking sites talk about HEALTHY RECIPES and QUICK AND EASY RECIPES.

Most home cooking is reasonably healthy but our generation is such a pussy that they think 1 table spoon of oil for cooking is going to give you a heart attack.

And quick and easy recipes usually mean shitty food.

I think I'm going to keep this as a cooking diary thread and change the title. I probably should have made this thread in the other forum so feel free to move it!

Well, it seems Korean cooking has lots of ingredients I dont have, so I wonder what else to make today. I'm leaning towards Kung Pao chicken and rice.

The biggest problem with cooking blogs is that they are almost always written by women, who unfortunately are horrible cooks (except my dear old Mother who makes amazing food!)

What makes you think it's difficult to make good food quickly? There are lots of good things that shouldn't take more than 20-30 minutes to throw together.

It seems like you're saying things just to be objectionable! First you said in the other thread that "western" food is bland, a statement which could only make sense to somebody who makes a concerted effort to bitch about "western" something several times a day (you are the product of a monoculture). Then you said women are terrible cooks, when in fact cooking is not hard to do, and it is hard to imagine a set of characteristics that women supposedly have that would make them naturally bad cooks.

Finally, you're a bitch.

No wait, finally, what you said about oil and our generation, I also disagree with that. It seems like something a simpleton would think of to prove a point.

YOU seem to be a SIMPLETON.

Haha, one dried lemon with a hole in it.

Do you literally get one serving from this? You should double everything so there's leftovers! I mean as long as it takes 2 hours to cook.

Well, to be honest, there are a lot of great food that can be made in 10 - 20 minutes, I think my problem is that when people are trying to categorize food in that time then somehow people are more focused on cutting a few minutes here and there and this is where usually I feel makes food a bit crappy.

So, yeah, it was a bit generic statement and same with the western and women comment. In general I mean, western food is a bit bland, I'm sure there are a lot of exceptions. And as chefs, men are usually better, I meant that I would rather a man run a cooking site than a woman, because the former has more skills. I'M SORRY IF THIS HURTS YOUR FEMINIST FEELINGS.

I think one of the reasons is that man are usually more experimental and they are more interested in how things work.

Also, I dont like leftovers. So I make sure everything is consumed in one sitting.

I pretty much hate cooking but I also hate being poor more. I pretty much use my crockpot constantly. Here's something super simple!

1 can of corn beef, (use Goya brand or something, make sure ingredients say all BEEF, no mystery meat or something and for God's sake don't use SPAM it's not the same thing)
1 green pepper chopped
1 small onion chopped
2 cloves of garlic chopped
1 8oz can of tomato sauce
1 small 8oz can of corn
a couple of green olives stuffed with pimento
2 tbs sofrito

In a medium-large sauce pan, sautee all the chopped veggies for a few minutes on medium heat. You should hear it sizzle. Don't let it burn or get brown. Once everything looks soft, add the corn beef from the can. Then add the can of tomato sauce and stir until it's all mixed. At this point you may have to add 1/2 or 1/4 cup of water. It depends how "saucy" you want it to be. If you like it thicker don't put a lot of water in - you'll be "reducing" it anyway.

Add the olives, corn, sofrito and mix. Let it cook for about 15 minutes or so. It's done. Serve it over white rice. I suggest also getting garlic bread to go with it, the sauce pretty much demands being soaked up.
This whole process should take you less than 30 minutes. If not you fucked up.

I'm not sure I know what corn beef is, I dont we use stuff like that in Iran. Can I use normal raw meat?

And what exactly is sofrito?

Corn beef is a cured (salted) brisket cut.

I'm sorry, sofrito is just a tomato cooking base, it has several spices in it. Adds a nice kick to whatever you're preparing.

Here's an easy one if you have a crock pot.

Pork rump
Bottle of mojo
A whole medium sized onion (diced)

Throw all of that shit in and let it cook on low for 8 hours. Then eat. Goes great with rice and beans.

MADali, I'll pay you five Iranian rainbow colored moneys to write 300 words about, I don't know, water without finding some meaningless reason to demonstrate your heroic mental illness as concerns women and non-Iranian things.

I am a much better cook than my wife and my mom is not bad.

My problem with cooking is that I will constantly stir stuff and chop things up like crazy.

Burger meat is very bland to me and I only enjoy it when I can add stuff to the meat before cooking it I made meatballs a while back that came out real nice.

Soak Bread (loaf not sandwich bread) in milk for about 20 minutes then squeeze all the milk out (Some of the sites say to take all of the crust off and rip it to pieces first.

Then add about a pound of beef and sausage with garlic, bread, onion and parmesan whatever you like and a couple of eggs then mix by hand roll into bals and cook in the oven for about 35 minutes at 350 degrees (F)

Add less than a lbs. of sausage though as a side note because it does dominate the flavor but this lasted me for about 3-4 days.
