If you powerlevel in tactics to early or not right you get destroyed by chocobo's

I used to have everyone stand around a monk and just constantly chakra and have them all with speed save so I could get about 10 turns before any monster.

Or you just set anyone's secondary skill to monk and have them chakra when not near anything.

My problem is I would focus only on gaining jobs so fights would be hard when I would have 2 chemist and a knight or some odd combo.

Eh it really depends, the trick is to kill all enemies but one on the battlefield, because the AI is retarded, and the last on will usually hide in a corner at that point.

Chocobos are annoying, but you usually don't fight the really awful ones (red and black) until later in the game.

The trick with Wiegraf is you can really boost the fuck out of Ramza in the first battle and by the second battle I don't think Zodiac Wiegraf even gets another turn.
