Aged Vermont cheddar that comes sealed in wax... slice it all up and eat that shit with crackers, fuck yeah!!!!!!

I prefer mild to sharp.

And I love swiss on sandwiches! I like to get baby swiss, because it tastes good and I enjoy the name.

I use colby-jack for grilled cheese, which I guess is not traditional, but it tastes great.

Mozzarella will always be close to top for me, though. Not the string cheese variety, but the fresh kind that comes in BIG BALLS.

Cut it up with some tomatoes, basil leaves and balsamic... the best.

The problem with cheese, and all dairy products I guess, is that eating any of it kicks my phlegm-producing whatevers in to overdrive, and it's very unpleasant.
