Salt suppresses bitter flavors, making things sweeter. That's why people put salt on tomatoes.

Perhaps old people have dulled taste senses, and so need a stronger level of sweetness in their watermelon. Or perhaps they grew up eating watermelon that was more bitter than present day watermelon and now are stuck in the habit of adding salt.
